Abstract
UMKM Mie Ayam Aldo is a privately owned business that has been running since 1998 and currently has three branches, all of which are located in West Jakarta. Mie Ayam Aldo's Kebon Jeruk branch has the longest operating hours, namely 14 hours with 6 employees. Apart from that, Mie Ayam Aldo Kebon Jeruk Branch is classified as a fairly busy branch with an average of 415 portions every day so this often results in employee fatigue and negligence in making consumer orders. Therefore, it is necessary to measure the workload in each section in order to determine optimal labor requirements. Based on workload calculations using the Full Time Equivalent (FTE) method, work at Mie Ayam Aldo Kebon Jeruk Branch has overload and underload categories. There are three jobs that have an overload category, namely making chicken noodles, plating or wrapping chicken noodles, and cleaning tables. There are three jobs that have an underload category, namely delivering orders, washing dishes, and cashier. Each job in the overload category requires one additional employee, so that in total it requires an additional 3 employees. Keywords : UMKM, Workload, Full Time Equivalent, Optimal Workforce UMKM Mie Ayam Aldo merupakan usaha milik pribadi yang telah berjalan sejak tahun 1998 dan saat ini memiliki tiga cabang yang keseluruhannya terletak di Jakarta Barat. Mie Ayam Aldo cabang Kebon Jeruk memiliki jam operasi terlama yaitu 14 jam dengan 6 karyawan. Selain itu, Mie Ayam Aldo Cabang Kebon Jeruk ini tergolong sebagai cabang yang cukup ramai dengan rata-rata 415 porsi setiap harinya sehingga hal ini sering mengakibatkan kelelahan dan kelalaian karyawan dalam membuat pesanan konsumen. Oleh karena itu diperlukan adanya pengukuran beban kerja pada setiap bagian demi mengetahui kebutuhan tenaga kerja optimal. Berdasarkan perhitungan beban kerja dengan metode Full Time Equivalent (FTE), pekerjaan dalam Mie Ayam Aldo Cabang Kebon Jeruk memiliki kategori overload dan underload. Terdapat tiga pekerjaan yang memiliki kategori overload yaitu membuat mie ayam, platting atau membungkus mie ayam, dan membersihkan meja. Pekerjaan yang memiliki kategori underload ada tiga, yaitu mengantar pesanan, mencuci piring, dan kasir. Masing-masing pekerjaan dengan kategori overload tersebut perlu melakukan penambahan karyawan satu orang, sehingga secara kesuluruhan memerlukan penambambahan karyawan sebanyak 3 orang.
