Abstract
One example of a common problem in the canteen management system is the long queues of employees who will pick up the cutlery and the food menu at the facilities provided by the canteen catering services. Seeing phenomenon of this problem, the analysis is required by using queuing model to evaluate queue phenomenon so that will get optimal solution of catering service at canteen facilities where employees do not wait too long due to the length of the queue by considering the cost. The object of research conducted on catering service in canteen roomat Factory 2 PT. Asno Horie Indonesia. Data collection is done by observing the employees who come to queue for lunch at the time of catering service during lunch between 12.00 - 12.45. Queue phenomenon that occurs is the queue Multi Channel Multi Phase model. In this study used multiple queue system queue analysis (M / M / S). The result of analysis shows that phase 1 uses M / M / 3 model: FCFS, phase 2 using M / M / 3 model: FCFS. The arrival rate of employees occurs simultaneously at the first 10 minutes of the afternoon break. The process of calculating the data is done manually and from the calculation, the average length of catering service in the canteen room for 0.44 minutes. The performance of existing queuing systems is less than ideal because queues still arise due to higher arrival rates compared to service levels. By POM-QM for Windows softwarethis queuing phenomenon is simulated using 1,2, and 3 servers in phase 1 and phase 2 and then the optimal solution in phase 1 is 3 server and the optimal solution in phase 2 is 2 server Salah satu contoh masalah yang biasa muncul pada sistem pengelolaan kantin adalah timbulnya antrian panjang sejumlah karyawan yang akan mengambil peralatan makan dan menu makanan pada fasilitas yang disediakan pengelola katering kantin. Melihat fenomena timbulnya permasalahan ini, diperlukan analisis dengan menggunaan model antrian untuk mengevaluasi fenomena antrian sehingga akan dihasilkan solusi optimal pada penyediaan fasilitas pelayanan katering kantin dimana karyawan tidak menunggu terlalu lama akibat lamanya antrian dengan mempertimbangkan biaya. Objek penelitian dilakukan pada pelayanan katering di ruang kantin Pabrik 2 PT. Asno Horie Indonesia. Pengumpulan data dilakukan dengan mengamati karyawan yang datang mengantri untuk makan siang pada saat waktu pelayanan katering selama istirahat siang antara pukul 12.00 – 12.45. Fenomena antrian yang terjadi adalah antrian model Multi Channel Multi Phase. Dalam Penelitian ini digunakan analisis sistem antrian jalur berganda (M/M/S). Hasil analisis menyatakan bahwa phase 1 menggunakan model M/M/3: FCFS, phase 2 menggunakan model M/M/3: FCFS. Tingkat kedatangan karyawan terjadi secara serentak pada 10 menit awal jam istirahat siang. Proses perhitungan data dilakukan secara manual dan dari hasil perhitungan, rata-rata lama pelayanan katering di ruang kantin selama 0,44 menit. Kinerja sistem antrian yang ada kurang ideal karena masih timbul antrian akibat tingkat kedatangan yang lebih besar dibandingkan dengan tingkat pelayanan. Dengan software POM-QM for Windows model antrian disimulasikan dengan 1,2,dan 3 server pada phase 1 dan phase 2 kemudian didapat solusi optimal pada phase 1 dengan 3 server dan solusi optimal pada phase 2 dengan 2 server
