Abstract
This study aims to analyze supply chain management in the Make to Order production model at Central Kitchen using the SCOR (Supply Chain Operations Reference) model and the Pareto method. The primary focus of this research is to identify and evaluate the supply chain performance and propose improvements based on the analysis.The research method used is descriptive qualitative, with data collection through interviews, observations, and document studies. The analysis is conducted using the SCOR model to measure supply chain performance based on key performance indicators such as Order Fulfillment Cycle Time (OFCT), Perfect Order Fulfillment (POF), and On-Time Delivery (OTD). Additionally, the Pareto method is used to identify the main factors affecting supply chain performance.The results indicate that applying the SCOR model and Pareto analysis provides valuable insights into improving supply chain performance in the Make to Order production model. This study also lays the foundation for further research in developing more efficient and responsive supply chain management strategies. Penelitian ini bertujuan untuk menganalisis manajemen rantai pasok pada pola produksi Make to Order di Central Kitchen dengan menggunakan pendekatan model SCOR (Supply Chain Operations Reference) dan metode Pareto. Fokus utama dari penelitian ini adalah mengidentifikasi dan mengevaluasi kinerja rantai pasok serta mengusulkan perbaikan berdasarkan analisis yang dilakukan.Metode penelitian yang digunakan adalah deskriptif kualitatif, dengan pengumpulan data melalui wawancara, observasi, dan studi dokumen. Analisis dilakukan menggunakan model SCOR untuk mengukur kinerja rantai pasok berdasarkan indikator kinerja utama seperti Order Fulfillment Cycle Time (OFCT), Perfect Order Fulfillment (POF), dan On-Time Delivery (OTD). Selain itu, metode Pareto digunakan untuk mengidentifikasi faktor-faktor utama yang mempengaruhi kinerja rantai pasok.Hasil penelitian menunjukkan bahwa penerapan model SCOR dan analisis Pareto memberikan wawasan berharga dalam meningkatkan kinerja rantai pasok pada pola produksi Make to Order. Penelitian ini juga memberikan dasar bagi pengembangan strategi manajemen rantai pasok yang lebih efisien dan responsif.
