Abstract
PT Amanah Prima Indonesia is one of the fruit juice industries engaged in food production. The main product produced is a fruit juice drink that is processed from selected fresh fruit under the brand of toza and is marketed specifically for horeca. Pink guava rtd products are among the second highest selling products after orange rtd. But despite the second highest sales, from the company's historical data there are some risks in the pink guava rtd supply chain such as spoiled products, returns and others. The purpose of this study was to analyze the risks in the supply chain of pink guava rtd products. This study uses the FMEA (Failure Mode and Effect Analysis) method. The analysis shows that there are 47 risks found in the pink guava rtd supply chain which are then grouped into 5 processes based on SCOR (Supply Chain Operations Reference). From the calculation using the FMEA method it is found that there are 2 high category risks, 25 medium category risks, and 20 low category risks. High risks are in the source and deliver processes. PT Amanah Prima Indonesia merupakan salah satu industri sari buah yang bergerak dalam produksi pangan. Produk utama yang diproduksi adalah minuman sari buah yang diproses dari buah segar pilihan dengan merk toza dan dipasarkan secara khusus untuk horeca. Produk pink guava rtd termasuk produk dengan penjualan tertinggi kedua setelah orange rtd. Namun meskipun penjualan tertinggi kedua, dari data historis perusahaan ada beberapa risiko pada rantai pasok pink guava rtd seperti produk spoilt, return dan lain-lain. Tujuan penelitian ini untuk menganalisis risiko pada rantai pasok produk pink guava rtd. Penelitian ini menggunakan metode FMEA (Failure Mode and Effect Analysis). Hasil analisis menunjukkan terdapat 47 risiko yang ditemukan pada rantai pasok pink guava rtd yang kemudian dikelompokkan menjadi 5 proses berdasarkan SCOR (Supply Chain Operations Reference). Dari hasil perhitungan menggunakan metode FMEA didapatkan bahwa terdapat 2 risiko kategori tinggi, 25 risiko kategori sedang, dan 20 risiko kategori rendah. Risiko tinggi terdapat pada proses source dan deliver. Kata Kunci: Risiko Manajemen Rantai Pasok, Industri Sari Buah, FMEA (Failure Mode and Effect Analysis), SCOR.
