Abstract

In food sales, the use of packaging is very important because it is used to keep the product safe, and the quality is maintained. This research was conducted to develop “ayam ungkep” product packaging which is currently only packaged using HDPE plastic bags without packaging labels, so that many consumers do not know the identity of the “ayam ungkep” product manufacturer. The purpose of this study is to propose a packaging design for “ayam ungkep” products using the Quality Function Deployment (QFD) method to increase sales to Lauku SMEs in the hope of meeting consumer needs and desires. Based on these problems, data was collected from 30 respondents to find out the Voice of Customer regarding the attributes which were then processed using House of Quality (HOQ). The results of the analysis are known in the development of product packaging that needs to be considered in the preparation of QFD phase I to meet consumer needs which are translated into technical requirements, getting priority on the attributes of safe packaging for food (food grade) with a weight of 621. The proposed recommendation is packaging with food grade quality. which has a vacuum and seal feature and has a packaging label that displays the brand, logo, product image, serving suggestions, storage suggestions, halal symbol and production date. Dalam penjualan makanan, penggunaan kemasan itu sangat penting karena digunakan untuk menjaga produk agar tetap aman dan kualitasnya terjaga. Penelitian ini dilakukan untuk pengembangan kemasan produk ayam ungkep yang saat ini hanya dikemas menggunakan kantong plastik HDPE tanpa label kemasan, sehingga banyak konsumen yang tidak tahu identitas produsen produk ayam ungkep. Tujuan dari penelitian ini untuk memberikan usulan rancangan kemasan produk ayam ungkep menggunakan metode Quality Function Deployment (QFD) guna meningkatkan penjualan pada UKM Lauku dengan harapan dapat memenuhi kebutuhan dan keinginan konsumen. Berdasarkan permasalahan tersebut dilakukan pengumpulan data yang didapat dari 30 responden untuk mengetahui Voice of Customer mengenai atribut yang kemudian dilakukan pengolahan dengan menggunakan House of Quality (HOQ). Hasil analisa diketahui dalam pengembangan kemasan produk yang perlu diperhatikan dalam penyusunan QFD tahap I untuk memenuhi kebutuhan konsumen yang diterjemahkan ke dalam persyaratan teknis didapatkn prioritas pada atribut kemasan aman untuk makanan (food grade) dengan bobot 621. Rekomendasi yang diusulkan adalah kemasan dengan kualitas food grade yang memiliki fitur vakum dan segel (seal) serta memiliki label kemasan yang menampilkan merek, logo, gambar produk, saran penyajian, saran penyimpanan, simbol halal dan tanggal produksi.
