Abstract

ABSTRAK Perusahaan minuman jelly adalah perusahaan produksi minuman yang bergerak pada bidang manufaktur yang berlokasi di Gunung Putri, Bogor. Pada tahun 2019 lini produksi minuman jelly tidak mampu memenuhi target hasil produksi dikarenakan adanya waktu downtime sebesar 869 jam dengan rata – rata 72 jam per bulan dimana jika dikonversi memiliki lost produk sebesar ± 86.400 karton per bulan.. Dalam peningkatan dan perbaikan pada lini produksi perlu dilakukan identifikasi penyebab pemborosan. Integrasi Lean six Sigma dengan menggunakan metode VSM dan VALSAT merupakan cara yang efektif untuk mengetahui pemborosan dan penyebab pemborosan yang terjadi. Dalam metode Value Stream Mapping dilakukan current state map kemudian mengidentifikasi pemborosan dengan Waste Assessment Model dan Waste Assesment Quisioner dimana did hasil pemborosan tertinggi berada pada jenis pemborosan waiting. Kemudian menggunakan metode Value Stream Analysis Tools untuk menentukan tools yang dipakai dalam membuat future state map. Pemborosan waiting ini di identifikasi lagi menggunakan seven tools yaitu root cause analysis dan fish bone untuk mengetahui penyebabnya, yaitu terjadinya delay pada mesin cooling. Setelah mengetahui akar permasalahan, dilakukan uji coba untuk mengurangi cycle time pada mesin cooling dan didapatkan hasil pada uji coba ke 2 dimana cycle time mesin cooling pada keadaan awal adalah 120 detik menjadi 96 detik. Kata Kunci : value stream mapping, value stream analysis tools , seven tools, Lean ABSTRACT Jelly beverage company is a beverage production company engaged in manufacturing located in Gunung Putri, Bogor. In 2019 the jelly drink production line was unable to meet the production target due to a downtime of 869 hours with an average of 72 hours per month where if they have lost products of ± 86,400 cartons per month. In the improvement and improvement of the production line it is necessary to examine the causes of waste. The integration of Lean Six Sigma using the VSM and VALSAT methods is an effective way to see waste and the causes of waste that occur. In the Value Stream Mapping method, a state map is carried out then identifies the waste with the Waste Assessment Model and Waste Assessment Questionnaire where the results of the waste are in the type of waiting waste. Then use the Value Stream Analysis Tools method to determine the tools used in making maps of the future . Waste of waiting again using seven tools, namely root cause analysis and fish bone to indicate the cause, namely the occurrence of delay in the cooling machine. After knowing the root of the problem, an experiment was conducted to reduce the cycle time on the cooling engine and get the results in the second trial where the cooling engine cycle time in the initial state was 120 seconds to 96 seconds.
