Abstract
ABSTRAK UKM Minuman Tradisional pada penelitian ini adalah perusahaan yang memproduksi minuman tradisional di daerah Kabupaten Bogor dan memproduksi jenis minuman tradisional yaitu kunyit asem, jahe sereh, dan beras kencur. Permasalahan yang terjadi pada UKM Minuman Tradisional ini adalah terdapat kekurangan hasil produksi dari target yang telah ditentukan, kekurangan tersebut bisa mencapai 10%. Salah satu faktor yang dicurigai menjadi penyebab kekurangan produksi tersebut adalah mesin. Hal ini dikarenakan kondisi mesin yang performanya menurun. Oleh karena itu perlu dilakukan penelitian menggunakan metode OEE untuk mengetahui kehandalan mesin yang digunakan untuk produksi saat ini. Analisa kehandalan mesin dilanjutkan dengan melakukan analisa six big losses dan analisa sebab akibat untuk menganalisa kerugian yang terjadi pada proses produksi UKM Minuman Tradisional. Hasil penelitian menunjukan bahwa nilai Overall Equipment Effectiveness (OEE) yang didapatkan dari mesin penggiling tersebut dengan rata – rata sebesar 63,86%, dengan losses yang paling berpengaruh adalah reduce speed losses dengan nilai rata – rata sebesar 33,98%. Adapun usulan perbaikan yang dapat dilakukan adalah dengan cara menghilangkan aktivitas yang tidak bernilai tambah seperti perendaman bahan baku dan pendinginan. ABSTRACT Traditional Drinks UKM in this study is a company that produces traditional drinks in the area of Bogor Regency and produces types of traditional drinks, namely tamarind turmeric, lemongrass ginger, and galangal rice. The problem that occurs in this traditional beverage is that there is a shortage of production results from the predetermined target, the shortage can reach 10%. One of the factors suspected to be the cause of the underproduction is the machine. This is because the engine's performance has decreased. Therefore it is necessary to do research using the OEE method to determine the reliability of the machines used for production today. The machine reliability analysis is continued by doing six big losses analysis and cause and effect analysis to analyze the losses that occur in the traditional beverage production process. The results showed that the Overall Equipment Effectiveness (OEE) value obtained from the grinding machine was 63.86% on average, with the most influential losses being reduce speed losses with an average value of 33.98%. The proposed improvements that can be done are eliminating non-value-added activities such as immersion of raw materials and cooling.
