Abstract

PT. Indofood CBP Sukses makmur Tbk. Tangerang is a company engaged in the food industry, Cup Noodle is one of the products.The company produces scrap Cup Noodle in the October-November 2018 of 3.8%, while the tolerance limit of the company is only 2.5%which is 1.3% difference. This research aims to reduce scrap production by providing recommendations for improvements.The method used is DMAIC (Define, Measure, Analyze, Improve, Control) by calculating the company's sigma value and using FMEA tools (Failure Mode and Effect Analysis)to provide recommendations for improvements to the causes of problems that are urgent for improvement.Stage Define creates a SIPOC diagram and identifies the VOC (Voice of Customer) to determine the description from CTQ (Critical To Quality).CTQ for Cup Noodle is 4 criteria.In the Measure stage, the calculation of the sigma value obtained by the DPMO value is 9670.5342 with a sigma value of 3.86. Based on the P control chart there are still processes that are beyond the upper and lower control limits, namely 1, 22, 24, 25, 29 and 30 October 2018 which means the process is not in control.The most dominant type of scrap in cup noodle products is Hancur Halus based on the results of the analysis using the Pareto diagram in the Analyze stageand obtained the causes of Hancur Halus scrap using the Cause and Effect Diagram.In the Improve stage, the calculation of FMEA obtained the most potential problem causing factor is the wrong transfer conveyor with an RPN (Risk Priority Number) value of 140so it becomes a priority for repairs.Adding the launcher at the end of the Conveyor is an alternative improvement proposal and is elaborated through the 5W + 1H analysis on the Improve stage.Next is given a control proposal to avoid new problems in the Control phase. Tangerang merupakan perusahaan yang bergerak di bidang industri makanan, salah satu produk yang dihasilkannya yaitu adalah Cup Noodle. Perusahaan memproduksi scrap atau pemborosan pada produksi Cup Noodle periode Oktober-November 2018 sebesar 3,8%, sedangkan batas toleransi dari perusahaan hanya sebesar 2,5% yang mana terdapat selisih 1,3%. Penelitan ini bertujuan untuk menekan jumlah produksi scrap dengan memberikan rekomendasi usulan perbaikan. Metode yang digunakan adalah DMAIC (Define, Measure, Analyze, Improve, Control) dengan menghitung nilai sigma perusahaan serta menggunakan tools FMEA (Failure Mode and Effect Analysis) untuk memberikan rekomendasi usulan perbaikan terhadap penyebab permasalahan yang mendesak untuk dilakukan perbaikan. Tahap Define membuat Diagram SIPOC serta mengidentifikasi VOC (Voice of Customer) untuk menentukan deskripsi dari CTQ (Critical To Quality). CTQ untuk Cup Noodle sebanyak 4 kriteria. Pada tahap Measure, hasil perhitungan nilai sigma diperoleh nilai DPMO sebesar 9670,5342 dengan nilai sigma sebesar 3,86. Berdasarkan peta kendali P masih terdapat proses yang diluar batas kendali atas maupun bawah yaitu tanggal 1, 22, 24, 25, 29 dan 30 Oktober 2018 yang berarti proses belum dalam kendali. Jenis scrap paling dominan produk cup noodle adalah Hancur Halus berdasarkan hasil analisis menggunakan diagram pareto di tahap Analyze serta diperoleh penyebab scrap Hancur Halus menggunakan Diagram Sebab- Akibat. Pada tahap Improve, perhitungan FMEA diperoleh faktor penyebab permasalahan yang paling potensial yaitu Transfer Conveyor yang salah dengan nilai RPN (Risk Priority Number) sebesar 140 sehingga menjadi prioritas untuk dilakukan perbaikan. Menambahkan peluncur diakhir Conveyor menjadi alternatif usulan perbaikan dan dijabarkan melalui analisis 5W+1H pada tahap Improve. Selanjutnya diberikan usulan pengendalian untuk menghindari timbulnya masalah baru pada tahap Control. Kata Kunci: Cup Noodle, Kualitas, Scrap, DMAIC, Six Sigma, FMEA
