Abstract

The increasing growth of the food and beverage industry makes competition more competitive. Supported by the development of increasingly sophisticated machines to increase productivity and produce good quality products. The need for machine maintenance that can guarantee the reliability of machine to make the machine always in best performance. Reliability Centered Maintenance (RCM) has been recognized and recognized as an optimal maintenance method that originated from the aviation industry. But the RCM methodology can be applied to all machines in all industries, including food and beverage industries. Through qualitative analysis with FMEA can produce maintenance points that must be carried out and analysis quantitatively produce MTTR which is the period to carry out maintenance. Qualitative analysis results obtained 59 items can be done with preventive maintenance and 14 items can be done with maintenance breakdown, while MTTR on each machine part, among others: component 1 is 425 hours, component 2 is 154 hours, component 3 is 526 hours, component 4 is 194 hours, component 5 is 106 hours, component 6 is 105 hours, component 7 is 811 hours, and component 8 is 218 hours with Reliability of all components at 90%. Keywords: Maintenance, RCM, Qualitative Analysis, Quantitative Analysis, FMEA, MTTR and Reliability Pertumbuhan industri makanan dan minuman yang semakin meningkat membuat persaingan semakin kompetitive. Didukung oleh perkembangan mesin yang semakin canggih untuk meningkatkan produktivitas dan menghasilkan produk yang berkualitas. Kebutuhan akan perawatan mesin yang dapat menjamin kehandalan sangat dibutuhkan untuk membuat mesin selalu dalam kinerja terbaiknya. Reliability Centered Maintenance (RCM) telah dikenal dan diakui sebagai metode perawatan optimal yang berawal dari industri penerbangan. Namun metodologi RCM dapat diaplikasikan untuk semua mesin dalam segala industri, termasuk industri makanan dan minuman. Melalui analisa secara kualitatif dengan FMEA dapat menghasilkan point-point perawatan yang harus dilakukan dan analisia secara kuantitatif menghasilkan MTTR yang merupakan periode untuk melakukan perawatan. Hasil analisa kualitatif didapatkan 59 item dapat dilakukan dengan preventive maintenance dan 14 item dapat dilakukan dengan breakdown maintenance, sedangkan MTTR pada setiap bagian mesin antara lain: komponen 1 sebesar 425 jam, komponen 2 sebesar 154 jam, komponen 3 sebesar 526 jam, komponen 4 sebesar 194 jam, komponen 5 sebesar 106 jam, komponen 6 sebesar 105 jam, komponen 7 sebesar 811 jam, dan komponen 8 sebesar 218 jam dengan Reliability semua komponen sebesar 90%.
