Abstract

The high demand for kitchen equipment for restaurants has also increased the company's total production capacity. Along with the increase in production capacity, there are constraints that also increase defects in the production process. This study aims to analyze the production process, especially the punch process in the prefab area. Through the formulation of deeper root problem solving analysis. Quantitative and qualitative approaches use fishbone diagrams and why-why analysis which is explained in more detail with statistical quality control. The use of fishbone diagrams has been proven in other studies to be able to analyze the 5 main factors that cause defects. Why-why analysis deepens the search for the root of the problem to the source of the problem. The DMAIC stages are used to sort out the research stages from input-process-output. The results of qualitative analysis from observation and data processing succeeded in reducing the number of rejects in the punch process from 7.0% to 2.7%. The implementation of improvements has also succeeded in reducing the number of rejects of similar processes. This improves the quality of problem analysis and improves company performance Keywords:, Fishbone, Why-Why Analysis, DMAIC, control chart Permintaan yang tinggi akan kebutuhan peralatan dapur untuk restoran juga meningkatkan total kapasitas produksi perusahaan. Seiring dengan meningkatnya kapasitas produksi terdapat kendala turut meningkatnya pula defect pada proses produksi. Penelitian ini bertujuan untuk menganalisa proses produksi khususnya pada proses punch di area prefab. Melalui perumusan analisa pemecahan akar masalah yang lebih mendalam. Pendekatan kuantitatif dan kualitatif menggunakan diagram fishbone dan why-why analysis yang dijabarkan lebih detail dengan statistical quality control. Penggunaan fishbone diagram telah dibuktikan pada penelitian lain mampu menganalisa 5 faktor utama penyebab defect. Why-why analysis memperdalam penelusuran akar masalah hingga ke sumber masalah. Tahapan DMAIC digunakan untuk memilah tahapan penelitian dari input-prosesoutput. Hasil analisa kualitatif dari observasi dan pengolahan data berhasil mengurangi jumlah reject pada proses punch dari 7,0% menjadi 2,7%. Impelemtasi perbaikan juga berhasil menurunkan jumlah reject proses serupa. Hal ini meningkatkan kualitas analisa masalah maupun perbaikan kinerja perusahaan.
