Abstract

ABSTRAK Makaroni M adalah UKM makanan ringan yang didirikan sejak tahun 2017 dan sampai saat ini sudah memiliki 5 cabang. Persediaan bahan baku merupakan faktor utama didalam usaha ini, karena menentukan kelancaran proses pengolahan makaroni. Namun pada kondisi aktualnya terdapat masalah yaitu ketidaksesuaian jumlah sisa persediaan bahan baku yang berada digudang terhadap pemeriksaan fisik dengan laporan persediaan bulan Januari sampai Februari 2020. Maka dari itu perlu dilakukannya identifikasi untuk mengetahui jenis bahan baku yang mengalami selisih persediaan terbesar menggunakan Diagram Pareto , selanjutnya melakukan analisis untuk mengetahui faktor penyebab yang membuat sisa persediaan tidak sama dengan laporan persediaan menggunakan Fishbone Diagram, dan diperlukan usulan perbaikan untuk mencegah terjadinya selisih persediaan menggunakan metode Failure Mode and Effect Analysis (FMEA) yang dilanjutkan dengan pendekatan 5 W + 1 H (What, Why, Who, Where, When, dan How). Hasil dari identifikasi diagram pareto jenis bahan baku yang mengalami selisih terbesar yaitu jenis bahan baku bumbu bubuk balado sebesar 28% dari 5 jenis bahan baku yang tidak sesuai jumlah persediaannya. Hasil analisis fishbone diagram faktor yang menyebabkan terjadinya selisih persediaan disebabkan oleh faktor material, faktor manusia, dan faktor metode. Usulan perbaikan yang dapat diusulkan yaitu menerapkan Visual Control, mengadakan morning briefing, dan setiap jenis bahan baku harus memiliki laporan persediaan sendiri. ABSTRACT Macaroni M is a small and medium enterprises snack that was established since 2017 and until now already has 5 branches. Raw material supplies are a major factor in this business, because it determines the smooth processing of macaroni. However, in actual conditions there is a discrepancy in the amount of residual inventory of raw materials that are in the warehouse against physical examinations with the preparation report of January to February 2020. Therefore, it is necessary to identify to know the type of raw material that has the largest inventory difference using Pareto Diagram, then perform analysis to know the causal factors that make the remaining inventory not the same as the inventory report using Fishbone Diagram, and the necessary improvement proposal to prevent occurrence of inventory difference using the Failure Mode and Effect Analysis (FMEA) method followed by a 5 W , Why, Who, Where, When, and How). The result of the identification of Pareto diagram of raw material type that experienced the largest difference is the raw material type Balado powder of 28% of 5 types of raw material that does not match the amount of its availability. The result of fishbone analysis of the factor diagram that causes the inventory difference is caused by material factor, human factor, and method factor. The proposed improvement proposed is that of implementing the Visual Control, holding a morning briefing, and each type of raw material should have its own inventory report.
