Abstract

This study aims to (1) Analyze and assess the halal supply chain structure of Rumah Que Que products, (2) Measure the performance of halal supply chain of Rumah Que Que products using Supply Chain Operations Reference (SCOR), Analytical Hierarchy Process (AHP), and Data Envelopment Analysis (DEA), and (3) Formulate alternative strategies to improve the performance of halal supply chain of Rumah Que Que products. The research method is a mixed method. The data used in this research consisted of primary data that were obtained through interviews and questionnaires, and secondary data that were obtained through literature review, general description of the company, and company supply chain management. The data processing was done by using Microsof Excell, Minitab 15, Demo Version of Banxia Frontier Analysis, and Expert Choice 11. The result showed that Rumah Que Que has a direct supply chain structure. Suppliers directly ship their goods to RQQ, which then directly markets the finished products to consumers, as well as cooperates with several convenience stores. After that, the RQQ supply chain performance calculation was performed using SCOR. AHP analysis showed that the compliance with quality standard has the highest priority of 0.155. According to the analysis using DEA, it was obtained that ketan srikaya pandan and ketan srikaya cinnamon products had efficient performance (100%). Only one product which performance was not efficient, i.e. ketan srikaya durian with efficiency value of 99.4%. The results of DEA analysis showed ketan srikaya durian product can be increased by reducing supply chain management cost by 18%. Keywords: halal supply chain, AHP, SCOR, DEA, supply chain performance Penelitian ini bertujuan untuk: (1) Menganalisis dan mengkaji struktur halal supply chain produk Rumah Que Que, (2) Mengukur kinerja halal supply chain produk Rumah Que Que dengan menggunakan model Supply Chain Operation Reference (SCOR), Analytic Hierarchy Process (AHP), dan Data Envelopment Analysis (DEA), dan, (3) Merumuskan alternatif strategi peningkatan kinerja halal supply chain produk Rumah Que Que. Penelitian ini merupakan penelitian mix methode. Data yang digunakan berupa data primer yang didapatkan melalui wawancara dan pengisian kuesioner. Data sekunder diperoleh melalui telaah pustaka, gambaran umum perusahaan, dan manajemen rantai pasok perusahaan. Pengolahan data menggunakan Microsof Excell, Minitab 15, Banxia Frontier Analysis Demo Version, dan Expert Choice 11. Hasil penelitian menunjukkan bahwa UKM Rumah Que Que memiliki struktur rantai pasok langsung dimana pemasok langsung mengirim ke UMKM kemudian setelah produk jadi, RQQ memasarkan secara langsung ke konsumen dan kerja sama dengan beberapa toko konsiyasi. Setelah itu dilakukan perhitungan kinerja rantai pasok RQQ menggunakan SCOR. Analisis AHP menunjukkan bahwa kesesuain dengan standar mutu memiliki prioritas yang paling tinggi dengan bobot 0,155. Analisis menggunakan DEA diperoleh produk ketan srikaya pandan dan cinnamon memiliki kinerja yang efisien (100%). Hanya satu produk yang kinerjanya belum efisien yaitu ketan srikaya durian dengan nilai efiesnsi 99,4%. Hasil analisis DEA menunjukkan bahwa produk ketan srikaya durian dapat ditingkatkan dengan menurunkan biaya supply chain manajemen sebesar 18%.
