Abstract

PT. XYZ is a company engaged in the field of food processing which produces soy sauce. One of the firms mission is to provide quality and affordable food for the people of Indonesia. One aspect is always trying to improve the quality and produce efficiently (cost). Associated with the production of soy sauce company has a target of "zero waste", but in reality they often waste in the production process. This study focuses on the activities that are going waste in the production process of soy sauce. Overuse of the most common is dowtime pasteurized (PHE) due to waiting for the results of the checking Quality. To eliminate waste used lean manufacturing approach. Lean manufacturing is a systematic approach to identifying and eliminating all forms of waste through continuous improvement of the flow of products based on consumer demand in order to make the process more efficient. With a strategy of lean manufacturing, waste can be identified with the seven waste. Based on data collection and processing of the waste obtained three of the most dominant big waste, namely: over stock (14.3%), transportation (22.3%) and waiting (24.3%). Then from the weight of waste carried out mapping of the seven mapping tools that eventually acquired the largest mapping tools are: Process Activity Mapping (score 1,603). After detailed mapping available for the proportion of time the operation was 53%, transportation 19%, 26% Inspection. While the classification of VA = 50%, NVA = 49% and NNVA = 2%. NVA dominated by 43% Inspection activities and transportation 39% and 18% process. To reduce the NVA was proposed three improvements: Re Lay out Lab Quality to them reduces the production lead time checking process Quality (Inspection) and will increase the productivity of production. Key words : Lean Manufacturing, Seven Waste, VALSAT, Process Activity Mapping. PT. XYZ adalah salah satu perusahaan yang bergerak pada bidang food processing yang memproduksi kecap manis.. Salah satu misi perusahaaan adalah memberikan makanan yang bermutu dan terjangkau untuk masyarakat Indonesia sehingga salah satu aspeknya adalah selalu berusaha untuk meningkatkan kualitas (quality) dan berproduksi secara efisien (cost) sehingga . Terkait dengan proses produksi kecap perusahaan mempunyai target “zero waste”, tetapi pada kenyataannya masih sering terjadi pemborosan di proses produksi. Penelitian ini fokus terhadap aktivitas yang merupakan pemborosan yang terjadi di proses produksi kecap. Pemborosan yang paling sering terjadi adalah dowtime proses pasteurisasi (PHE) dikarenakan menunggu hasil pengecekan Quality. Untuk menghilangkan pemborosan digunakan pendekatan lean manufacturing. Lean manufacturing merupakan suatu pendekatan yang sistematis untuk mengidentifikasikan dan menghilangkan segala bentuk pemborosan melalui perbaikan terus menerus dengan aliran produk berdasarkan permintaan konsumen dengan tujuan agar proses lebih efisien. Dengan strategi lean manufacturing, pemborosan dapat diidentifikasi dengan seven waste. Berdasarkan pengumpulan dan pengolahan data terhadap pemborosan didapatkan 3 besar pemborosan yang paling dominan, yaitu : over stock (14,3%), transportation (22.3%) dan waiting (24,3%). Kemudian dari bobot pemborosan dilakukan mapping terhadap seven mapping tools yang akhirnya didapatkan mapping tools terbesar yaitu : Process Activity Mapping (skor 1.603). Setelah dilakukan mapping secara mendetail didapatkan proporsi waktu proses untuk operasi 53%, transportasi 19%, Inspeksi 26%. Sedangkan klasifikasi VA = 50%, NVA = 49% dan NNVA = 2%. NVA didominasi oleh aktivitas Inspeksi 43% dan transportasi 39% dan proses 18%. Untuk mengurangi NVA tersebut diusulkan 3 perbaikan : Re Lay out Lab Quality ke proses produksi akan megurangi lead time proses pengecekan Quality (Inspeksi) dan akan meningkatkan produktivitas Produksi.
