Abstract
dituntut untuk menjamin keamanan pangan yang dikemasnya terhindar dari kontaminasi. Sebagai bentuk rasa tanggung jawab, industri ini harus dapat menunjukkan secara transparan bagaimana jaminan keamanan pangannya telah direncanakan dan sekaligus diimplementasikan. Hal ini dapat dicapai melalui penerapan suatu sistem manajemen keamanan pangan yang sesuai dengan standar internasional, yaitu Food Safety System Certification - FSSC 22000 untuk kemasan pangan. Standar ini merupakan gabungan standar International Standard Organization - ISO 22000:2005 dan Publicly Available Specification - PAS 223:2011, dimana ISO 22000 didukung oleh Hazard Analysis and Critical Control Point - HACCP Plan dan dari segi GMP (Good Manufacturing Practice) didukung dengan PAS 223. Tujuan penelitian ini adalah menganalisa HACCP, menentukan OPRP (Operational Pre Requisite Program) & CCP (Critical Control Point), serta memvalidasi CCP pada proses laminasi yang merupakan salah satu step proses pembuatan flexible packaging. Penelitian ini mengambil kasus pada penerapan FSSC 22000 di salah satu industri flexible packaging yang ada di Kawasan Industri Jakarta Timur. Dipilihnya step proses laminasi pada penelitian ini karena pada proses ini adalah salah satu proses penting dalam pembuatan flexible packaging. Sebagai pendukung implementasi sistem ini persyaratan GMP terlebih dahulu dipenuhi dengan mengacu pada Klausul PAS 223. Sedangkan analisa HACCP Plan dilakukan sesuai dengan ISO 22000 untuk memastikan potensi-potensi adanya kontaminasi hazard terhadap produk bisa dicegah / diturunkan / dihilangkan. Dengan analisa HACCP Plan pada proses laminasi ini dapat ditentukan OPRP & CCP proses tersebut. Proses validasi CCP dilakukan dengan mengambil data hazard sisa solvent untuk kemasan makanan dengan spesifikasi PET//Adhesive//AL-Foil//Adhesive//LLDPE. Karena sisa solvent adalah salah satu bahan kimia yang bisa mengkontaminasi makanan yang berasal dari flexible packaging. Hasil penelitian ini menunjukkan bahwa data sisa solvent masih valid, reliable, dan proses yang capable, serta nilainya sesuai dengan customer requirement. Selanjutnya untuk memastikan sistem jaminan keamanan kemasan pangan ini secara konsisten dijalankan, maka perlu dilakukan pemantauan sistem melalui verifikasi pelaksanaan PRP, OPRP, dan CCP secara periodik. Flexible packaging industry as a producer of packaging for food and beverages is currently required to ensure the safety of packaged food from contamination. As a sense of responsibility, the industry must be able to show transparently how the food safety assurance has been planned and implemented as well. This can be achieved through the implementation of a food safety management system in accordance with international standards, that is Food Safety System Certification - FSSC 22000 for food packaging. This standard is a combination of standard International Standard Organization - ISO 22000:2005 and Publicly Available Specification - PAS 223:2011, in which ISO 22000 is supported by Hazard Analysis and Critical Control Point - HACCP Plan, and from GM P (Good Manufacturing Practice) term is supported by PAS 223. The purpose of this study was to analyze the HACCP, determine OPRP (Operational Pre Requisite Program) & CCP (Critical Control Point) and to validate the CCP of lamination process, which is one of flexible packaging process step. This research takes the case on FSSC 22000 implementation in one flexible packaging industry in East Jakarta Industrial Estate. Lamination process step is chosen in this study because it is one of the important process in the manufacture of flexible packaging. As a supporting of the system implementation, GMP requirements beforehand is comply with reference to Clausal PAS 223. While analysis of the HACCP Plan is done in accordance with ISO 22000 to ensure the potential hazard contaminations of the product can be prevented / lowered / removed. By analyzing HACCP Plan in the lamination process, it can be determined the OPRP & CCP of the process. CPP validation process is performed by taking hazard data residual solvent of food packaging with specification PET // Adhesive // AL-Foil // Adhesive // LLDPE, because residual solvent is one of the chemicals that could contaminate the food that comes from flexible packaging. The results of this study indicate that the data residual solvent still valid, reliable, and capable in process, and its value in accordance with customer requirements as well. Furthermore, to ensure the packaging of food safety assurance system is consistently implemented, it is necessary to monitor the system by verification of the implementation of PRP, OPRP, and CCP periodically.
