Abstract
Dough Divider is a machine that functions to divide the dough in making bread so that the size and weight of the dough can be the same as each other, while also speeding up the production process. The large capacity of the machine affects production results. This study aims to determine the demand capacity forecast for sweet bread, determine the actual results of the dough divider machine capacity and improve the time and capacity of the dough divider machine. The results of the calculation of demand forecasting are obtained using the Trend Linear Method, because this method has the smallest error, which is equal to 0.04%. The results of calculating the actual capacity of the machine using the Rough Cut Capacity Planning (RCCP) method obtained from the calculation of the required capacity (Capacity Require) can be seen that the available machine capacity is 4,334 pcs/day or 130,000/month with 9 working hours/day, or 130,000 pcs/month with machine working hours of 270 hours/month. And to improve the time and capacity of the dough divider machine in order to fulfill production capacity so that it can meet the needs of consumer demand, the calculation results obtained by planning an aggregate cost of overtime are Rp. 20,895,252 / year or Rp. 1+741.329/month. So that the request can be fulfilled, it must add a maximum of 2 hours of overtime per day. Keywords: Production Capacity, Master Production Schedule, Rough Cut Capacity Planning, Consumer Requests. Dough Divider adalah sebuah mesin berfungsi untuk membagi adonan dalam membuat roti agar ukuran dan berat adonan bisa sama satu sama lain, selain itu juga mempercepat proses produksinya. Besarnya kapasitas mesin mempengaruhi hasil produksi. Penelitian ini bertujuan untuk menentukan peramalan kapasitas permintaan roti manis, menentukan hasil hasil aktual kapasitas mesin dough divider dan memperbaiki waktu dan kapasitas mesin dough divider. Hasil perhitungan peramalan permintaan didapatkan hasil menggunnakan Metode Trend Linear, karena metode ini memiliki kesalahan eror terkecil yaitu sebesar 0,04%. Hasil perhitungan aktual kapasitas mesin menggunakan Metode Rough Cut Capacity Planning (RCCP) didapatkan hasil dari perhitungan besar kapasitas yang dibutuhkan (Capacity Require) dapat di ketahui kapasitas mesin yang tersedia adalah 4.334 pcs/hari atau 130.000/bulan dengan 9 jam kerja/hari, atau 130.000 pcs/bulan dengan jam kerja mesin sebanyak 270 jam/bulan. Dan untuk memperbaiki waktu dan kapasitas mesin dough divider dalam rangka pemenuhan kapasitas produksi sehingga dapat memenuhi kebutuhan permintaan konsumen didapatkan hasil perhitungan dengan perencanaan agregat biaya ongkos lembur sebesar Rp. 20.895.252 /Tahun atau Rp. 1+741.329/bulan. Jadi agar permintaan dapat terpenuhi maka harus menambah jam lembur (Overtime) sebanyak maksimal 2 jam perhari.
