Abstract

CV. XYZ is a company that has received a HACCP certificate which is engaged in Coffee Roastery. One of CV.XYZ's visions is to maintain the quality of the production process by maintaining an optimal level of effectiveness in implementing the HACCP system. Previous studies have shown that the factors that influence the effectiveness of HACCP implementation are human attributes, system attributes, exogenous attributes and company attributes. The data collection method used to identify the effect that occurs on each attribute determined in this study is to use a questionnaire distribution technique for testing samples through 150 respondents. Furthermore, data processing was carried out using statistical analysis with the concept of structural equation modeling (SEM) using Partial Least Square (PLS). The results of this study note that the factors included in the human attributes, system attributes, company attributes and external attributes have a positive and significant influence on the level of effectiveness of the implementation of the HACCP management system and suggestions for improvement in the form of providing training to increase employee competence, implementing good procedures in HACCP for reducing losses on products, implementing government regulations that are strictly stipulated, increasing the budget for optimizing each procedure for implementing HACCP can be implemented to increase the level of effectiveness in implementing the HACCP management system in CV.XYZ. Keywords: HACCP, structural equation modeling (SEM), Partial Least Square (PLS). CV. XYZ merupakan salah satu perusahaan yang telah mendapatkan sertifikat HACCP yang bergerak dalam bidang Coffee Roastery. Salah satu visi pada CV.XYZ adalah mempertahankan kualitas proses produksi dengan mempertahankan tingkat efektifitas yang optimal pada penerapan sistem HACCP. Dalam penelitian sebelumnya menujukkan bahwa faktor-faktor yang mempengaruhi efektifitas penerapan HACCP yaitu atribut manusia, atribut sistem, atribut eksogen dan atribut perusahaan. Metode pengumpulan data yang dilakukan untuk megidentifikasi pengaruh yang terjadi pada setiap atribut yang ditentukan pada penelitian ini adalah dengan menggunakan teknik penyebaran kuisioner terhadap pengujian sampel melalui 150 responden. Selanjutnya, pengolahan data dilakukan menggunakan analisis statistik dengan konsep structural equation modeling (SEM) menggunakan Partial Least Square (PLS). Hasil penelitian ini diketahui bahwa faktor-faktor yang termasuk kedalam atribut manusia, atribut sistem, atribut perusaahaan dan atribut eksternal memiliki pengaruh positif dan signifikan terhadap tingkat efektivitas penerapan sistem manajemen HACCP dan usulan perbaikan berupa pemberian pelatihan untuk meningkatkan kompetensi karyawan, penerapan prosedur yang baik dalam HACCP untuk pengurangan kerugian pada produk, pelaksanaan peraturan pemerintah yang ditetapkan dengan tegas, peningkatan anggaran untuk pengoptimalan setiap prosedur penerapan HACCP dapat diterapkan untuk meningkatkan tingkat efektivitas pada penerapan sistem manajemen HACCP di CV.XYZ.
