Abstract

So far, the formulation of spice value chain system modeling using dynamic systems has not been widely carried out. This study aims to develop a simulation of the possible scenarios of spice processing and marketing of Kato Dehydrated Foods in the Spice Up The World program. Kato Dehydrated Foods is the first winner of Food Startup Indonesia in 2020 and participates in the development of the Spice Up The World program ecosystem. The sampling method used is the purposive sampling technique. Methods of data collection using interviews and participant observation with each research instrument is a list of questions and observation sheets. The key informant in this research is the Founder of Kato Dehydrated Foods with the supporting informant being the mentor of Dehydrated Foods at Food Startup Indonesia 2020 which is the initiator of Food Startup Indonesia who is also involved in developing the Spice Up The World ecosystem. The data analysis method uses a dynamic system model formulation with the Vensim PLE (Personal Learning Edition) analysis tool. This study shows that the scenario results in 2021-2025 are able to increase the average value of spice processing from 8 tons/year to 18 tons/year and are able to reduce the average marketing value from Rp. 2.410.000/year to Rp. 2.010.000/year. Selama ini formulasi pemodelan sistem rantai nilai rempah dengan menggunakan sistem dinamik belum banyak dilakukan. Penelitian ini bertujuan untuk mengembangkan simulasi terhadap kemungkinan skenario pengolahan rempah dan pemasaran Kato Dehydrated Foods dalam program Spice Up The World. Kato Dehydrated Foods adalah pemenang pertama Food Startup Indonesia tahun 2020 dan ikut dalam pengembangan ekosistem program Spice Up The World. Metode sampel yang digunakan adalah teknik Purposive Sampling. Metode pengumpulan data menggunakan metode wawancara dan observasi partisipan dengan instrumen penelitian masing-masing adalah daftar pertanyaan dan lembar pengamatan. Informan kunci pada penelitian ini adalah Founder Kato Dehydrated Foods dengan informan pendukung adalah mentor Dehydrated Foods pada Food Startup Indonesia 2020 yang merupakan penggagas Food Startup Indonesia yang juga terlibat dalam pengembangan ekosistem Spice Up The World. Metode analisis data menggunakan formulasi model sistem dinamik dengan alat analisis Vensim PLE (Personal Learning Edition). Penelitian ini menunjukkan hasil skenario pada tahun 2021-2025 mampu meningkatkan rata-rata nilai pengolahan rempah-rempah dari 8 ton/tahun meningkat menjadi 18 ton/tahun dan mampu menurunkan rata-rata nilai pemasaran dari Rp2.410.000/tahun menurun menjadi Rp2.010.000/tahun.
