Abstract
Pengeringan merupakan salah satu metode pengolahan pascapanen yang bertujuan untuk menurunkan kadar air bahan pangan sehingga mampu memperpanjang umur simpan dan menjaga mutu produk. Pisang sale sebagai produk olahan dari pisang kepok memiliki nilai ekonomi tinggi apabila kualitasnya sesuai dengan Standar Nasional Indonesia (SNI 01-439- 1996), khususnya pada parameter kadar air. Penelitian ini bertujuan untuk menganalisis pengaruh variasi temperatur udara pengering yang dihasilkan dari kompresor berkapasitas (½ PK, ¾ PK, dan 1 PK terhadap mutu pisang sale. Metode penelitian dilakukan secara eksperimental dengan memanfaatkan udara panas buangan dari sistem refrigerasi (AC) sebagai sumber energi pengering. Variasi temperatur udara diamati terhadap perubahan kadar air pada pisang sale hingga mencapai kisaran standar mutu. Hasil penelitian menunjukkan bahwa kompresor ½ PK, ¾ PK, dan 1 PK dapat menghasilkan temperatur udara pengering yang lebih tinggi sehingga mempercepat proses penurunan kadar air. Variasi temperatur udara tertentu terbukti mampu menghasilkan kadar air akhir 4% dalam waktu 15 menit sehingga untuk mencapai kadar air sesuai SNI 01-439-1996 yaitu 20% dalam jangka waktu 189 menit atau 3 jam 9 menit. Dengan demikian, pemanfaatan udara panas dari sistem pendingin dapat menjadi alternatif teknologi pengeringan yang lebih efisien, terukur, dan tidak bergantung pada kondisi cuaca. Drying is a post-harvest processing method that aims to reduce the water content of food, thereby extending shelf life and maintaining product quality. Pisang sale, a processed product made from Kepok bananas, has high economic value if its quality meets the Indonesian National Standard (SNI 01-439-1996), particularly regarding water content. This study aims to analyze the effect of variations in drying air temperature produced by compressors with capacities (½ HP, ¾ HP, and 1 HP) on the quality of banana sale. The research method was carried out experimentally by utilizing hot exhaust air from the refrigeration system (AC) as a source of drying energy. Variations in air temperature were observed against changes in water content in banana sale until it reached the standard quality range. The results showed that compressors with ½ HP, ¾ HP, and 1 HP could produce higher drying air temperatures, thereby accelerating the process of reducing water content. Certain air temperature variations were proven to be able to produce a final water content of 3% in 15 minutes so as to achieve water content according to SNI 01-439-1996, namely 20% in a period of 350 minutes or 5 hours 50 minutes. Thus, the use of hot air from the cooling system can be an alternative drying technology that is more efficient, measurable, and does not depend on weather conditions.
