Abstract

ABSTRAK Perkembangan perekonomian di Indonesia dihadapkan pada liberalisasi perdagangan bebas. Persaingan perusahaan dalam penjualan produk semakin bersaing. Berbagai cara untuk meningkatkan penjualan ditempuh oleh produsen, seperti inovasi produk. Salah satu produk yang diinovasi adalah makanan tempe. Beberapa tempat pembuatan tempe tidak mengikuti standar SNI yang berlaku, alat pemecah kedelai yang mereka gunakan kebanyakan dari kayu, dimana kayu yang selalu dibasahi air bisa menumbuhkan jamur dan zat lain yang tidak diinginkan yang justru akan mengancam kesehatan. Pembuatan tempe yang menggunakan banyak air akan membuat area di sekitar menjadi lembab dan becek, hal ini memicu pertumbuhan jamur dan zat lain pada alat yang digunakan terutama pada alat yang terbuat dari material rentan akan air. Tugas akhir bertujuan untuk merancang alat pemecah kedelai yang ditujukan bagi para pengusaha kecil dan menengah dengan berstandarkan SNI untuk menghasilkan tempe yang higienis. Manfaat dari tugas akhir ini adalah dapat memberi solusi kepada masyarakat khususnya pengrajin tempe untuk memperhatikan kebersihan alat yang digunakan selama produksi dan lebih sadar akan kandungan tempe yang dihasilkan serta memberikan pengalaman untuk para desainer dalam berkarya. Kata kunci : Alat Pemecah Kedelai, Tempe, Tempe higienis, Kedelai ABSTRACT The economic development in Indonesia is faced with liberalization of free trade. The company's competition in product sales is increasingly competitive. Various ways to increase sales are taken by producers, such as product innovation. One of the products that are innovated is the food of tempe. Some tempe-making venues do not follow the applicable SNI standards, soy breaking tools they use mostly from wood, where the wood that is always moistened with water can grow fungi and other unwanted substances that will actually threaten health. Preparation of tempe that uses a lot of water will make the area around to be moist and muddy, this triggers the growth of fungi and other substances in tools used primarily on tools made from materials susceptible to water. The final project aims to design soy-breaking tool intended for small and medium entrepreneurs with standardized SNI to produce a hygienic tempe. Benefits of this final project is to provide solutions to the community, especially tempe craftsmen to pay attention to the cleanliness of tools used during production and more aware of the content of tempe produced and provide experience for the designers in the work.
